Cheese for pizza

I used to work in a non chain pizza shop and they used mild cheddar because it was cheaper. I am sure pizza gets made out of all sorts of different cheeses, especially abroad where you would expect them to use the local cheese if it's suitable. I am not totally sure but I think cheese suitable for pizza is usually not low fat cheese.
